Caramelized Scallops with Radler Cocktail

 

Who doesn’t love an appetizer paired with a cocktail. During the holidays especially.

Caramelized Scallops with “The Calling” Hollandaise paired with Boulevard Radler Holiday Cocktail

Ingredients for Scallops
3 Tbsp White Wine Vinegar
¼ Cup Boulevard Brewing “The Calling” IPA
White Pepper
Prosciutto Slices
3 Egg Yolks from Walmart Great Value Eggs
8 oz Unsalted Butter
Walmart Great Value Olive Oil
10 Sea Scallops
Diced Chives
1 Head Radicchio


Pro Tip: If you don’t have White Pepper in your arsenal of seasonings, add it.

Ingredients for Cocktail
1 Can Boulevard Cherry Lime Radler beer
Cranberry Juice
Triple Sec
Simple Syrup
Rosemary Sprig for Garnish

Directions
Caramelized Scallops with “The Calling” Hollandaise
Place prosciutto on baking sheet and place in 400-degree oven for 8-10 minutes until crisp.
Heat together “the calling” IPA, vinegar, and a dash of white pepper in a sauce pan and gently boil. Continue cooking until liquid is reduced by 2/3 volume. Remove from heat and let cool.
Using a double boiler, heat water in bottom of boiler. Combine Walmart Great Value egg yolks and beer reduction in top container of double boiler and beat together with a whisk. Continue whisking until mixture becomes thick and foamy. Add melted butter and a dash of salt for seasoning.
Heat a pan coated with Walmart Great Value olive oil on high heat. Season sea scallops liberally with sea salt. Cook scallops evenly on each side until caramelized and opaque.
Place radicchio leaves around tray and place scallops into center of leaves. Spoon hollandaise sauce over scallops, add small piece of crispy prosciutto and garnish with chopped chives.
Serve warm and enjoy!

Radler Cherry-Cran Holiday Cocktail:
Fill glass with Ice
Fill glass half full with Boulevard Brewing Cherry Lime Radler
Fill glass ¼ with Cranberry Juice
Add splash of Pomegranate Juice
Add 1/2 oz Simple Syrup
Float 1/2 oz Triple Sec
Stir contents of glass
Garnish with Rosemary Spring
Bottoms up!
