Holiday Smoked Eggnog Brownies
Ingredients:
1/2 C eggnog
8 oz white chocolate chips
3/4 C unsalted butter
1 1/3 C sugar
2 eggs
1/2 tsp salt
1/4 tsp rum extract
2 1/4 C flour
Frosting:
2 C powdered sugar
3 or 4 TBL eggnog
1/8 tsp nutmeg
Instructions:
- Preheat smoker to 350 degrees (also can be done in an oven without the smoked effect)
- In double boiler (or microwave) melt white chocolate and butter. When melted and smooth, add eggnog and stir to combine
- With stand mixer or hand mixer, mix together the melted chocolate eggnog mixture, sugar, eggs, salt, and rum extract.
- Stir in flour gently until just combined. Do not over mix!
- Spread evenly into 9×13 greased baking dish.
- Put on smoker and bake at 350 degrees for 18-20 minutes, or until toothpick test comes out clean. Be careful NOT to over bake or brownies will be end up being too firm and not fudgy.
- Mix together frosting ingredients with stand/hand mixer until desired consistency for spreading.
- Cool completely before frosting. Dust lightly with freshly ground nutmeg and serve!
