Hot Cocoa Campfire Pancakes
Ingredients:
1 C all purpose flour
1/4 C cocoa powder, unsweetened
1/3 C sugar
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 egg
1 C buttermilk
1/2 C milk
2 TBL butter, melted
1 Hot Chocolate drink tablet or melting chocolate
1/4 C heavy cream
Mini marshmallows
Instructions:
1. In a large bowl combine flour, cocoa powder, sugar, baking soda, baking powder, and salt. Stir.
2. Whisk together the buttermilk, milk, egg and butter in a separate bowl.
3. Pour wet ingredients into dry ingredients and stir to combine. Be sure not to over-mix. Your batter is ready to pour!
4. Heat your griddle over the campfire (or the skillet on your stove) to medium heat.
5. Spray with non-stick cooking oil
6. Pour a small test pancake to check griddle for correct cooking temp
7. Flip pancakes when edges have set and tiny bubbles have started to form
8. Repeat process pouring approximately 1/4 C batter for each pancake (more or less depending on your size preference)
9. Use foil pan or cookie sheet on warm side of campfire or in low temp oven to keep pancakes warm until ready to serve
10. Meanwhile, make hot chocolate sauce for pancakes by melting the hot chocolate drink tablets with the heavy cream in a small metal bowl over the campfire (or in the microwave for approx one minute).
Whisk until sauce becomes smooth. It will reduce and thicken rather quickly so keep it warm and over low heat.
11. Time to plate! Stack pancakes and top with mini marshmallows and drizzle with the yummy warm hot chocolate sauce. Bravo!! Time to eat.
