Chili Lime Cod Fish Tacos
Ingredients:
4 cod fillets
1 tsp cumin
3 TBL tajin seasoning
1/2 tsp salt
1/2 tsp black pepper
1/2 C mayo
1/2 C sour cream
Juice and zest of 1 lime
2 C shredded multicolor cabbage (or coleslaw)
Fresh cilantro, chopped for garnish
8 flour tortillas
1 red onion, sliced thin
1/2 C apple cider vinegar
2 TBL cane sugar
Instructions:
1. Use paper towel to pat cod filets dry. Sprinkle seasonings…cumin, salt, pepper, and approx 2 TBL of the tajin seasoning on all sides of cod filets. Set aside.
2. Make chile lime crema in small bowl by combining mayo, sour cream, 1 TBL of tajin seasoning, and lime juice and zest. Stir together until well blended and refrigerate.
3. Make slaw in medium bowl by combining cabbage, cilantro, and 2 TBL of the chili lime crema you just made. Refrigerate.
4. Pickle the onions in a small bowl by adding the cider vinegar, sugar, and thinly sliced red onions. Set aside.
5. Toast tortillas lightly in olive oil in skillet over medium-high heat until lightly browned. Do not over-crisp. Place in tortilla warmer or in oven on low heat to keep warm.
6. Heat oil in large skillet over medium-high heat. Sear cod filets on each side for approx 3 minutes per side. Cod should have nice color and start to flake when done.
7. Assemble tacos! Place warm tortilla on plate. Spread thin layer of chili lime crema on tortilla. Place cod fillet on top. Add scoop of slaw on top of fish. Top with some pickled onions and sprinkle with cilantro to garnish. Repeat process and serve! Sooooo good.
