Fresh West Coast Crab Wraps 

West Coast Crab Wraps 

Ingredients: 

8 flour tortillas (8 inch size) 

Crab meat (or imitation crab meat), fully cooked, approx 12 oz 

1/2 C mayonnaise 

Favorite hot sauce or wasabi 

1 avocado (medium-large size) 

1 large apple 

1 sweet red pepper 

1 cucumber (small) 

1/2 C bean sprouts (optional)

Instructions: 

  1. In a small bowl, combine mayo with a small amount of your favorite hot sauce or wasabi to taste.  Stir until well blended. Set aside. 
  1. Prep the produce by dicing up the avocados, apples, red pepper, and cucumber. Set aside. 
  1. Break up the crab meat into small pieces and set aside. 
  1. Lay out tortillas on a large cutting board or large work space and evenly spread the seasoned mayo on each tortilla. 
  1. Layer tortillas with crabmeat, diced red peppers, cucumbers, apples, and avocados. 
  1. Fold ends in and roll each tortilla up tightly to enclose the fillings. 
  1. Place each wrap seam side down and slice wraps in half on the diagonal for serving.  Plate up and enjoy!  Soooo tasty
