West Coast Crab Wraps
Ingredients:
8 flour tortillas (8 inch size)
Crab meat (or imitation crab meat), fully cooked, approx 12 oz
1/2 C mayonnaise
Favorite hot sauce or wasabi
1 avocado (medium-large size)
1 large apple
1 sweet red pepper
1 cucumber (small)
1/2 C bean sprouts (optional)
Instructions:
- In a small bowl, combine mayo with a small amount of your favorite hot sauce or wasabi to taste. Stir until well blended. Set aside.
- Prep the produce by dicing up the avocados, apples, red pepper, and cucumber. Set aside.
- Break up the crab meat into small pieces and set aside.
- Lay out tortillas on a large cutting board or large work space and evenly spread the seasoned mayo on each tortilla.
- Layer tortillas with crabmeat, diced red peppers, cucumbers, apples, and avocados.
- Fold ends in and roll each tortilla up tightly to enclose the fillings.
- Place each wrap seam side down and slice wraps in half on the diagonal for serving. Plate up and enjoy! Soooo tasty
