Quesadilla Party Ring with Homemade Salsa 

Quesadilla Party Ring with Homemade Salsa 

Quesadilla Ingredients: 

20 soft flour tortillas (8 inch) 

Chicken breast tenders, 1 lb 

Favorite bbq seasoning + Dash of cumin  

1 small yellow onion 

1 yellow bell pepper 

1 small red onion 

1 C taco sauce 

1/2 C homemade salsa (recipe below – make this first) 

4 C colby jack cheese, finely shredded 

2 C cheddar cheese, finely shredded 

Fresh cilantro (optional for garnish) 

Salsa Ingredients: 

28 oz can whole peeled tomatoes, including juice 

1 small white onion 

1 or 2 jalapeno peppers (depending on spice level desired) 

3 cloves garlic 

1 1/2 tsp cumin 

1 tsp salt 

1 tsp sugar 

Juice from 1 or 2 limes 

Fresh cilantro

Quesadilla Ring Instructions: 

  1. Preheat oven to 375 degrees F.   
  1. Use round pizza pan or sheet pan and cover with parchment paper, cutting off excess paper that hangs over edges 
  1. Place small oven-safe glass bowl in center of pan (salsa dish size) 
  1. Place stack of tortillas on cutting board and slice them in half using a pizza cutter 
  1. Place halved tortillas inside a ziplock gallon baggie or cover with a cloth to keep from drying out. Set aside. 
  1. Sprinkle chicken tenders with your favorite bbq seasoning and a dash of cumin. Place seasoned tenders on grill (or in oven at 350 degrees) and cook until internal temp of 165 degrees F and chicken is no longer pink inside  
  1. Shred or chop cooked chicken tenders. Set aside. 
  1. Prep the veggies. Seed and dice the yellow bell pepper, finely dice the yellow and red onions, and chop the cilantro. 
  1. In a large bowl, add the chicken, yellow peppers, red onions, yellow onions, taco sauce, 1/2 C of the homemade salsa and 2 C of the colby jack cheese.  Stir well to combine. This will be your filling. 
  1. Take each one of the halved tortillas and place a scoop of the filling on top.  Roll each of these halved “filled” tortillas into a cone shape.  Careful to keep all the filling inside.  It should look like an ice cream cone. 
  1. Take each of the cone-shaped filled quesadillas and lay them on the pizza pan/sheet pan in a circle around the glass bowl.  The small pointed ends of the cones should touch the glass bowl with the filling facing out. Continue laying the cones until you have a circle shape around the bowl.  
  1. Once bottom layer is completed, sprinkle 1 C cheddar cheese over the top of the circle.  
  1. Repeat the process to make more quesadilla cones for a 2nd layer.  Gently place cones on top of the cones, spaced evenly.  Sprinkle 1 C colby jack cheese over the top of this layer.  If you have remaining cones, you can do a 3rd layer, and sprinkle top with the remaining cheese. 
  1. Place entire quesadilla ring in the oven, leaving the oven-safe bowl in the center to hold everything in place, and bake for approximately 20 minutes (check at 15), until cheese is melted and tortillas have slightly toasted and filling is hot. 
  1. Carefully remove hot glass bowl from center and replace with a dish filled with the homemade salsa in the center of the ring.  Sprinkle chopped fresh cilantro over the entire thing.  Serve warm and impress your party crowd!   

Simple salsa Instructions: 

  1. Prep the produce. Rough chop onion, seed & chop jalapeno pepper, chop garlic, and rough chop cilantro 
  1. Add all salsa ingredients (see above) into a food processor (or blender) 
  1. Pulse several times and process until desired consistency. 
  1. Taste salsa and adjust seasoning to personal preferences. 
  1. Serve in center of the quesadilla party ring and save any extra in a airtight container in the refrigerator.  Simple and SOOO worth it!
